ПЕРЕНОСИМОСТЬ ДЕТСКИХ МОЛОЧНЫХ СМЕСЕЙ И ПРОБЛЕМА КАЧЕСТВЕННОГО СОСТАВА БЕЛКА

Аннотация
Процесс производства детских молочных смесей является сложным и многоступенчатым и включает этапы термической обработки. Имеются сведения о том, что разные режимы термической обработки оказывают влияние на структуру белково-углеводных комплексов, что может повлиять на степень усвоения белка смеси. Показано, что контакт сложных белковых агрегатов смеси с клетками пейеровых бляшек повышает риск развития аллергических реакций у предрасположенных к атопии детей раннего возраста. Рассматривается влияние денатурации белка детских молочных смесей на их переносимость.
